Two courses in Domestic Science were described in the Catalogue for 1914-1915: Domestic Science and General Cookery. The Course in Domestic Science offered “…. instruction in both theory and practice in the subjects fundamental to a complete knowledge of Domestic Science.” This course prepared the “…. young women to teach Domestic Science in High Schools and for the duties of the household.” The Course in General Cookery included “…. instruction in the care of the kitchen and all its appointments; the principles of cookery, as applied to baking, boiling, stewing, broiling, roasting, steaming; and practical demonstration of these principles in the cooking of meats, vegetables, eggs, pastries, cake, puddings, sauces, salads, and salad dressings, and desserts of various kinds.” This photograph of the Domestic Science Laboratory appeared in the Bucknell University Bulletin 17th Series No. One, 1920. |
